Serves 8 people
Ingredients
- 1 3/4 cups plain flour
- 1/2 tsp ground cinnamon
- 3 tsp baking powder
- 1/4 tsp bicarb soda
- 1/3 cup brown sugar
- 1/2 cup chopped/crumbled walnuts
- 3 large over-ripe bananas
- 3 large eggs, lightly whisked
- 1 tsp vanilla extract
- 100g margarine, melted & cooled
Directions
-
Preheat oven to 175C.
-
Sift flour, cinnamon, baking powder, soda, 1/2 tsp salt, brown sugar & nuts. Combine.
-
Mash bananas in a separate bowl, then stir in whisked eggs, vanilla extract and melted butter. Line long sides of 11×22cm loaf pan with baking paper and grease ends with left over melted butter.
-
Fold wet ingredients into dry ingredients with a spatula or wooden spoon, until only just combined (don’t overmix).
-
Scrape mix into loaf pan. Place in oven and bake for 30 mins. Check loaf and cover with alfoil if top is getting overcooked. Cook for a further 20-30 mins, until a skewer cleanly exits.
-
Cool in loaf pan for 10 mins, then turn out onto cooling rack carefully.
