Spanish Chicken and Ham Soup

Ingredients

  • 1 tablespoon olive oil
  • 1 shallot , minced
  • 8 cups chicken broth
  • 1 zucchini , halved lengthwise and sliced
  • 4 ounces mushrooms , sliced
  • 2 tomatoes , diced
  • 1 cup ham , finely diced
  • 1 1/2 cups cooked chicken , diced
  • thyme , a pinch
  • salt
  • pepper

Directions

  1. In a soup pot, heat olive oil over med-high heat.

  2. Add shallot; saute 3 minutes.

  3. Add broth, zucchini, mushrooms, and tomatoes; bring mixture to a boil.

  4. Decrease heat to medium; simmer 15 minutes.

  5. Stir in ham, chicken, thyme, salt, and pepper to taste; continue to simmer 5 minutes.

  6. Remove from heat and let stand briefly before serving.
