Ingredients
- 1 tablespoon olive oil
- 1 shallot , minced
- 8 cups chicken broth
- 1 zucchini , halved lengthwise and sliced
- 4 ounces mushrooms , sliced
- 2 tomatoes , diced
- 1 cup ham , finely diced
- 1 1/2 cups cooked chicken , diced
- thyme , a pinch
- salt
- pepper
Directions

In a soup pot, heat olive oil over med-high heat.

Add shallot; saute 3 minutes.

Add broth, zucchini, mushrooms, and tomatoes; bring mixture to a boil.

Decrease heat to medium; simmer 15 minutes.

Stir in ham, chicken, thyme, salt, and pepper to taste; continue to simmer 5 minutes.

Remove from heat and let stand briefly before serving.
