Lemon Turkey Fettuccini

Ingredients

  • 2 C. heavy cream
  • 1/2 t. salt
  • 1/4 t. white pepper
  • 3 lemons, zest and juice
  • 2 C. shredded turkey breast
  • 1 lb. fettuccini
  • 1 C. parmesan cheese
  • Fresh chopped parsley

Directions

  1. In a large skillet, bring cream to a gentle boil. Season with salt, white pepper, lemon zest and juice. Add turkey, cover and keep warm over low heat.

  2. Cook fettuccini until al dente according to package instructions. Drain, add to sauce with parmesan and toss to blend. Season with additional salt and pepper to taste. Serve garnished with parsley on top.
