Phyllo Cheese Triangles

These need to be frozen ahead of time. Great time saver for last minute party

Ingredients
- 2 Cups (8 oz.) shredded Muenster cheese
- 1 Cup (4 oz.) shredded extra-sharp Cheddar cheese
- 1/4 Cup Chopped fresh parsley
- 1 large egg, lightly beaten
- Dash of ground red pepper
- 1/2 (16 oz.) package frozen phyllo pastry, thawed
- 1 cup butter or margerine, melted
Directions

Combine first 5 ingredients; set aside.

Unfold phyllo, and cover with a slightly damp towel to prevent pastry from drying out.

Place one sheet of phyllo on a flat surface; brush with butter.

Cut lengthwise into 1 1/2 inch strips.

Place about 1/2 tsp cheese mixture at base of each strip. Fold the right bottomcorner over to form a triangle. Continue folding back and forth into a triangle, gently pressing corners together.

Repeat process with remaining phyllosheets, butter and chese mixture. Brush triangles with remaining butter and place seam side down on baking sheets; freeze until firm.

Place in an airtight container;label and return to freezer.

To serve, place frozen triangles on a baking sheet.

Bake at 400 degrees for 20 minutes. Yield 5 dozen.
