Lemon Lime Refrigerator Cake

Ingredients

  • CAKE
  • 1 3-oz. box lime jello
  • 3/4 cup boiling water
  • 1/2 cup cold water
  • 1 18-1/4-oz. box lemon cake mix
  • FROSTING
  • 1 envelope whipped topping mix
  • 1 3-oz. box lemon jello
  • 1 1/2 cups milk
  • 1 t. vanilla or orange extract

Directions

  1. Dissolve gelatin in boiling water and stir well. Add cold water. Set aside; at room temperature.

  2. Mix and bake cake according to directions on for for a 9×13 pan. Cool cake 20-25 minutes. Poke deep holes through the cake, spacing about 1/2" apart. With a cup; slowly pour gelatin mixture into holes. Refrigerate cake while preparing topping.

  3. For frosting, in a chilled deep bowl, mix whipped topping mix, instant pudding, milk and extract until stiff, about 4-8 minutes. Immediately frost cake.

  4. Store in refrigerator. Cake may be frozen.
