Apple Tofu

Serve with baked potatoes, baked butternut squash, steamed broccoli, and a green salad.

Serves 6 peopleIngredients
- 3 bricks tofu cubed
- 1 1/4 tsp vegetable oil
- 4 apples, Granny Smith, in 1/2 inch wedges
- 1 1/2 cups chicken broth, divided
- 1/3 cup brown sugar
- 1/4 cup apple cider vinegar
- 3 T corn starch
- 2 T vegetarian worcestershire sauce
- salt and pepper, to taste
Directions

Heat oil in large skillet. Add chicken and brown.

Add apple slices, sauté 3 minutes, stirring occasionally.

Add 3/4 cup chicken broth, reduce heat, cover and simmer 10 minutes.

Mix remaining ingredients together, then add.

Cook over medium heat, stirring constantly until sauce thickens.
