Ingredients
- 4 English muffins split
- 1 3/4 cup mayonnaise
- 8 slices tomato
- 8 tsp. minced onion
- 8 1/2 oz. can of artichoke hearts, drained and halved
- 1/2 - 3/4 cup grated sharp cheddar cheese
Directions

Spread a thin coat of mayo on cut side of each muffin.

Place a slice of tomato, 1 tsp. onion, 2-3 artichoke hearts (halved), salt and pepper to taste on top.

Mix remaining mayo with cheese.

Frost entire muffin/veggie mixture with mayo mixture.

Bake at 350 – 15 minutes.
