Artichoke Puffs

Ingredients

  • 4 English muffins split
  • 1 3/4 cup mayonnaise
  • 8 slices tomato
  • 8 tsp. minced onion
  • 8 1/2 oz. can of artichoke hearts, drained and halved
  • 1/2 - 3/4 cup grated sharp cheddar cheese

Directions

  1. Spread a thin coat of mayo on cut side of each muffin.

  2. Place a slice of tomato, 1 tsp. onion, 2-3 artichoke hearts (halved), salt and pepper to taste on top.

  3. Mix remaining mayo with cheese.

  4. Frost entire muffin/veggie mixture with mayo mixture.

  5. Bake at 350 – 15 minutes.
