Sesame turkey salad

Ingredients

  • 5 tbsp lime juice
  • 2 tbsp honey
  • 3cm piece peeled fresh ginger, grated
  • 2 tbsp soy sauce
  • 6 tbsp sesame oil
  • 130g dried vermicelli noodles
  • 200g mangetout
  • 1/2 cucumber
  • 8 spring onions, finely sliced
  • 500g shredded and cooked turkey or chicken meat
  • 2 tbsp sesame seeds, toasted

Directions

  1. Combine the lime juice, honey, ginger, soy sauce and sesame oil in a bowl.

  2. Place the vermicelli noodles in a large bowl and pour over enough boiling water to cover. Set aside to soak for 5 minutes. Drain and refresh, then set aside.

  3. Blanch the mangetout briefly in boiling salted water. Drain and refresh. Cut the cucumber into batons. Toss the mangetout, cucumber, spring onions, vermicelli and turkey with the dressing and sesame seeds.
