Ingredients
- 3 cups baby spinach
- 2 teasponns olive oil
- 1/2 cup crumbled feta
- 1/2 teasppon oregano
- 1 minced clove of garlic
- 1 pound boneless chicken breast
- 1 teaspoon lemon pepper
Directions

Preheat oven to 400 degrees.

In sauce pan cook spinach and garlic in oil; set aside.

Place chicken breasts between two pieces of plastic and pound them with a hammer until 1/4" think.

Spoon spinach onto chicken breasts.

Top spinach with feta.

Fold chicken breasts along the sides then roll up.

Secure with toothpick, brush with olive oil, sprinkle with lemon pepper and oregano.

Bake until chicken is no longer pink.
