Courgette and haloumi fritters

Makes 25, can be made in advance and warmed on a baking tray in a medium hot-oven for 5-10 minutes, cannot be frozen

- 300g (about 6-8) courgettes
- 1 onion, grated
- 250g haloumi cheese, grated
- 75g plain flour
- 2 tsp grated lemon rind
- 2 eggs
- 1 tbsp chopped fresh dill
- light olive oil, to fry
- mayonnaise or aioli, to serve
Directions

Coarsely grate the courgettes, place in a sieve, then squeeze out as much liquid as possible. Put in a bowl and add the onion, haloumi, flour, lemon rind, eggs and dill. Season and stir to combine. Form the mixture into 25 bite-size patties. Refrigerate for 30 minutes to firm.

Heat the oil in a frying pan over a medium heat and fry, in batches, for 1-2 minutes each side until golden. Drain on kitchen towel.

Serve the fritters warm with the mayonnaise or aioli and a little sea salt.
