Light & Crisp Waffles

Serves 4 people

Ingredients

  • 2 eggs yolks
  • 2 cups milk
  • 2 cups flour
  • 1 T. baking powder
  • 1/2 t. salt
  • 1/3 cup vegetable oil
  • 2 egg whites, stiffly beaten

Directions

  1. Preheat waffle maker. Put all ingredients except eggs white in a large mixer bowl. Beat on low speed until moistened. Increase to medium, mix until smooth.

  2. By hand, gently fold in egg whites. Pour 1/2 cup over center of grids. Bake about 2 minutes.
