Doughnut Muffins

These muffins are almost like cake, sweet and rich with a spice of nutmeg.

Ingredients

  • 3 tablespoons butter
  • 3 tablespoons oil
  • 1/3 cup white sugar
  • 1/3 cup brown sugar
  • 2 eggs
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1 teaspoon nutmeg
  • 3/4 teaspoon salt
  • 1 teaspoon vanilla
  • 2 2/3 cups flour
  • 1 cup milk

Directions

  1. Cream the butter and sugars together well. Add the oil little by little, creaming until smooth.

  2. Beat in the eggs, one at a time.

  3. Stir in the baking powder, baking soda, salt, nutmeg, and vanilla.

  4. Stir in flour and milk alternately. Make sure batter is well blended, but not over-mixed.

  5. Fill fourteen greased muffin holes nearly full. Bake at 350 degrees.

  6. Dip tops of muffins into melted butter, and dust with cinnamon sugar. Serve warm or cold.
