Gingerbread

This gingerbread is moist and spicy. In my mind this recipe is the best I have ever come across.

Ingredients
- 1 1/4 cups flour
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1 teaspoon ginger, ground
- 1/4 teaspoon cloves
- 1/4 teaspoon salt
- 1/4 cup brown sugar
- 1/4 cup shortening
- 1/2 cup molasses
- 1/2 teaspoon baking soda
- 1/4 teaspoon baking soda
- 3/4 cups boiling water
- 1 large egg, beaten
- 2 tablespoons fresh ginger, grated finely
Directions

Combine the flour, baking powder, spices, and salt in a medium-sized bowl. Whisk well.

Cream the shortening and brown sugar separately in a small bowl.

In another bowl, beat the molasses and 1/2 teaspoon baking soda well.

Add the molasses to the shortening mixture and beat well.

In a separate bowl, stir together the boiling water and 1/4 teaspoon baking soda.

Add molasses mixture alternately with boiling water to dry ingredients in large bowl.

Fold in the beaten egg and fresh ginger.

Bake at 350 degrees in a greased, floured pan. Eat warm or cold.
