Mom’s Pancakes

These pancakes are the fluffiest, most tender pancakes imaginable.

Ingredients
- 4 cups flour
- 2 tablespoons sugar
- 4 tablespoons baking powder
- 2 teaspoons salt
- 2 eggs
- 2 tablespoons oil
- 5 cups water
Directions

Whisk flour, sugar, baking powder, and salt together in a large bowl.

In another bowl, beat the eggs, oil, and water together.

Make a well in the middle of dry ingredients and pour in wet ingredients. Immediately whisk rapidly until thoroughly mixed. There should be no lumps left.

Cook pancakes individually on a hot griddle using 1/4 cup of batter per pancake. Serve warm with maple syrup.
