Pumpkin Bread

This is a rich, soft, almost cake-like pumpkin bread.

Ingredients
- 1 1/2 cups sugar
- 1/2 cup oil
- 2 eggs
- 1 5/8 cup flour
- 1 teaspoon baking soda
- 3/4 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1 1/2 cups pumpkin puree (mine is very liquid)
Directions

Beat the sugar, oil, and eggs together.

In another bowl, combine the flour, soda, salt, cinnamon, and nutmeg. Whisk to mix.

Add pumpkin and flour mixture alternately to sugar mixture, beating slowly but thoroughly. Mix until very smooth and silky.

Pour into a greased and floured loaf pan. Bake at 300 degrees until set and browned.
