Palmiers

These are so light and flaky, I would recommend making a double batch.

Ingredients
- 1/2 cup sugar
- 2 t. ground cinnamon
- 1 sheet frozen puff pastry, thawed
Directions

Preheat the oven to 400°. Line 2 baking sheets with parchment paper.

Combine the sugar and cinnamon in a bowl. Sprinkle 1/2 the sugar mix on a clean work surface. Lay the puff pastry on top of the sugar and sprinkle the remaining sugar mix on top of the pastry.

Using a rolling pin, roll the sugar into the dough, and roll the dough to about 1/8" thick.

Working from long side of the pastry, roll the dough to meet in the middle. Snuggly wrap the rolled dough in plastic wrap and put in refrigerator for at least 30 minutes.

Cut the dough into 1/4” thick slices. Lay the slices on prepared baking sheets and bake for 20-23 minutes. When done, the cookies should be golden brown.

Remove from the oven, and cool on a rack before serving.
