Lamb cutlets with pistachio pesto

Ingredients
- 100g shelled pistachios
- 30g fresh white breadcrumbs
- grated zest of 1 lemon
- 1 garlic clove, crushed
- 25g grated Parmesan
- 15g pack fresh basil
- 150ml olive oil, plus extra for brushing
- 6 lamb cutlets, trimmed
Directions

Put the pistachios, breadcrumbs, lemon zest, garlic, Parmesan, basil and olive oil in a food processor and process to a paste. Season with salt and pepper.

Heat a griddle pan to high, brush the cutlets with oil and cook for 3-4 minutes on each side. Serve with the pistachio pesto.
