Vanilla Pudding

Ingredients
- 5 tablespoons cornstarch
- 1/3 cup sugar
- 1/4 teaspoon salt
- 2 1/3 cups milk
- 1 egg
- 1 tablespoon sugar
- 1 tablespoon margarine
- 2 teaspoons vanilla
- 2 tablespoons cocoa and 2 tablespoons more sugar (for chocolate pudding)
Directions

Combine the cornstarch, sugar, and salt (along with cocoa and extra sugar if desired) in a medium saucepan. Whisk in the milk.

Over a medium flame, stir pudding until thickened.

Beat the egg and 1 tablespoon sugar separately until light.

Pour a little hot pudding over egg. Mix well. Add egg mixture to pudding, whisking carefully in.

Simmer several moments, then add the margarine and vanilla. Bring back to a boil. Turn off and cool before eating.
