Oatmeal Cake

This is a moist, heavy cake that is good either as a simple spice cake or a chocolate cake.

Ingredients
- 1 3/4 cups boiling water
- 1 cup oatmeal
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1/2 cup butter
- 2 eggs
- 1 1/2 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 cup cocoa (for Chocolate Oatmeal Cake)
Directions

Combine oatmeal and boiling water. Add butter and stir until melted.

Stir in the sugar and eggs once mixture has cooled some.

Add the flour, soda, salt, cinnamon, and cocoa (if desired). Mix well.

Pour batter into a greased and floured 9×13 pan. Bake at 350 for 40 minutes.
