Ingredients
- 8 slices of bacon
- 1 11oz can of mexicorn
- 1T canola oil
- 1/2t salt
- 1 avocado peeled and diced
- 2T lime juice
- 1 chipotle pepper in adobo sauce, chopped
- 1T adobo sauce
- 8 chicken breast tenders
Directions

In bowl, combine corn, avocado, lime juice, chipotle pepper, oil and salt.

Brush chicken with adobo sauce, sprinkle with salt and pepper and wrap with bacon.

In skillet, heat oil and cook chicken.

Drain and serve over salsa.
