Pastry Cream

Ingredients
- 3 cups milk
- 1/2 cup sugar
- 1/4 teaspoon salt
- 2 teaspoons vanilla
- 1/4 cup cornstarch
- 1 tablespoon flour
- 4 egg yolks
- 1/4 cup butter
- 1 cup whipped cream
Directions

Stir 2 1/2 cups milk, the sugar, and salt together in a saucepan. Bring to a simmer, making sure to dissolve the sugar.

In a bowl, whisk the cornstarch and flour into the 1/2 cup remaining milk. Then whisk in the egg yolks.

Dribble a little hot milk mixture into egg mixture, whisking well. Then whisk egg mixture (through a strainer) into saucepan. Bring to a simmer once more, whisking constantly.

Remove from heat and sieve once more. Stir in the butter and vanilla.

Refrigerate until cool (covered), then fold in whipped cream. Makes five cups.
