Pastry Cream

Ingredients

  • 3 cups milk
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 2 teaspoons vanilla
  • 1/4 cup cornstarch
  • 1 tablespoon flour
  • 4 egg yolks
  • 1/4 cup butter
  • 1 cup whipped cream

Directions

  1. Stir 2 1/2 cups milk, the sugar, and salt together in a saucepan. Bring to a simmer, making sure to dissolve the sugar.

  2. In a bowl, whisk the cornstarch and flour into the 1/2 cup remaining milk. Then whisk in the egg yolks.

  3. Dribble a little hot milk mixture into egg mixture, whisking well. Then whisk egg mixture (through a strainer) into saucepan. Bring to a simmer once more, whisking constantly.

  4. Remove from heat and sieve once more. Stir in the butter and vanilla.

  5. Refrigerate until cool (covered), then fold in whipped cream. Makes five cups.
