Ingredients
- 5 pounds red potatos
- 2 teaspoons minced garlic
- 3/4 teaspoon pepper
- 1 large onion
- 3/4 cup mayonnaise
- 2 tablespoons sour cream
- 3 tablespoons olive oil
- 1 1/2 teaspoon salt
- 1/2 cup butter
- 1 tablespoon balsamic vinegar
- 5 ounces crumbled blue cheese
Directions

Preheat oven to 450 degrees.

Line a shallow roasting pan with foil.

Chop potatos into bite-size cubes.

In a large bowl combine potatos, olive oil, garlic, 1 teaspoon salt, and 1/2 teaspoon pepper.

Arrange potatos in the roasting pan.

Bake 35 minutes.

While potatos are cooking; mix mayonnaise, blue cheese, sour cream, and 1/2 teaspoon pepper.

Allow potatos to cool to room temperature.

In large skillet melt butter.

Add onions and cook for 30 minutes over low heat.

Add vinegar and cook for 2 minutes.

Mix everything together.

Serve soon after mixing.
