Roasted Potato Salad

Ingredients

  • 5 pounds red potatos
  • 2 teaspoons minced garlic
  • 3/4 teaspoon pepper
  • 1 large onion
  • 3/4 cup mayonnaise
  • 2 tablespoons sour cream
  • 3 tablespoons olive oil
  • 1 1/2 teaspoon salt
  • 1/2 cup butter
  • 1 tablespoon balsamic vinegar
  • 5 ounces crumbled blue cheese

Directions

  1. Preheat oven to 450 degrees.

  2. Line a shallow roasting pan with foil.

  3. Chop potatos into bite-size cubes.

  4. In a large bowl combine potatos, olive oil, garlic, 1 teaspoon salt, and 1/2 teaspoon pepper.

  5. Arrange potatos in the roasting pan.

  6. Bake 35 minutes.

  7. While potatos are cooking; mix mayonnaise, blue cheese, sour cream, and 1/2 teaspoon pepper.

  8. Allow potatos to cool to room temperature.

  9. In large skillet melt butter.

  10. Add onions and cook for 30 minutes over low heat.

  11. Add vinegar and cook for 2 minutes.

  12. Mix everything together.

  13. Serve soon after mixing.
