Sicilian Chicken

Ingredients

  • 1 T. olive oil
  • 1 lb. chicken breasts
  • 1 medium yellow onion, chopped
  • 5 cloves of garlic, minced
  • 3 C canned, peeled plum tomatoes
  • 1/2 C. chicken broth
  • 1 T red wine vinegar
  • 2 t dried basil
  • 1 t. dried oregano
  • Salt & pepper to taste

Directions

  1. In a large skillet, heat olive oil over medium heat. Add chicken and cook until browned, about 10 minutes. Remove chicken to a plate and cover with foil.

  2. In the same skillet, add onion; sauté until translucent, about 5 minutes. Add more oil if needed. Add garlic and cook for 1 minute longer. Add tomatoes, broth, vinegar, basil, oregano, salt and pepper; bring to a boil. Reduce heat, return chicken to skillet and cover; cook until chicken is no longer pink, about 30 minutes.

  3. Serve with rice, pasta or noodles.
