Sicilian Chicken

Ingredients
- 1 T. olive oil
- 1 lb. chicken breasts
- 1 medium yellow onion, chopped
- 5 cloves of garlic, minced
- 3 C canned, peeled plum tomatoes
- 1/2 C. chicken broth
- 1 T red wine vinegar
- 2 t dried basil
- 1 t. dried oregano
- Salt & pepper to taste

In a large skillet, heat olive oil over medium heat. Add chicken and cook until browned, about 10 minutes. Remove chicken to a plate and cover with foil.

In the same skillet, add onion; sauté until translucent, about 5 minutes. Add more oil if needed. Add garlic and cook for 1 minute longer. Add tomatoes, broth, vinegar, basil, oregano, salt and pepper; bring to a boil. Reduce heat, return chicken to skillet and cover; cook until chicken is no longer pink, about 30 minutes.
