Pennsylvania Pot Roast

Ingredients

  • 1 T. canola oil
  • 3 lb. pot roast
  • 1 pkg. Lipton Onion Soup
  • 2 C. water
  • 2 t. soy sauce
  • 2 cloves garlic, minced
  • 2 bay leaves
  • 1 t. dried oregano
  • 1/4 t. black pepper
  • 2 onions, sliced, divided (about 2 cups)

Directions

  1. In a large heavy skillet, heat oil over high heat. Add roast and brown on all sides, about 5 minutes each side.

  2. In a crockpot bowl, combine Onion Soup, water, soy sauce, garlic, bay leaves, oregano, pepper and half of the onion. Mix well. Place roast in pan; place remaining onions over roast.

  3. Cook on low for 8 hours.

  4. Transfer roast to a carving board and let rest for 15 minutes. Thinly slice on the diagonal and serve.
