Pennsylvania Pot Roast

Ingredients
- 1 T. canola oil
- 3 lb. pot roast
- 1 pkg. Lipton Onion Soup
- 2 C. water
- 2 t. soy sauce
- 2 cloves garlic, minced
- 2 bay leaves
- 1 t. dried oregano
- 1/4 t. black pepper
- 2 onions, sliced, divided (about 2 cups)
Directions

In a large heavy skillet, heat oil over high heat. Add roast and brown on all sides, about 5 minutes each side.

In a crockpot bowl, combine Onion Soup, water, soy sauce, garlic, bay leaves, oregano, pepper and half of the onion. Mix well. Place roast in pan; place remaining onions over roast.

Cook on low for 8 hours.

Transfer roast to a carving board and let rest for 15 minutes. Thinly slice on the diagonal and serve.
