Turkey and Black Bean Enchilada

Ingredients

  • 2 cans black beans, rinsed and drained
  • 1 lb lean ground turkey
  • 1 med pepper chopped
  • 1 small onion, chopped
  • 1 can enchilada sauce, divided
  • 1 c shredded Mexican cheese
  • 8 tortillas (8 in)

Directions

  1. In small bowl, mash 1 can black beans and set aside.

  2. In a large skillet, cook turkey, pepper and onion over medium heat until meat is no longer pink.

  3. Drain.

  4. Add the mashed beans, remaining whole beans, 1/2 of the enchilada sauce, and 1/2 of the cheese.

  5. Heat through.

  6. Place 2/3 of mixture into each tortilla.

  7. Roll up and place seam side down in two 11 × 7 baking dishes coated with cooking spray.

  8. Pour remaining sauce and cheese over the top.

  9. Bake at 425 for 15 – 20 minutes.
