Turkey and Black Bean Enchilada

Ingredients
- 2 cans black beans, rinsed and drained
- 1 lb lean ground turkey
- 1 med pepper chopped
- 1 small onion, chopped
- 1 can enchilada sauce, divided
- 1 c shredded Mexican cheese
- 8 tortillas (8 in)
Directions

In small bowl, mash 1 can black beans and set aside.

In a large skillet, cook turkey, pepper and onion over medium heat until meat is no longer pink.

Drain.

Add the mashed beans, remaining whole beans, 1/2 of the enchilada sauce, and 1/2 of the cheese.

Heat through.

Place 2/3 of mixture into each tortilla.

Roll up and place seam side down in two 11 × 7 baking dishes coated with cooking spray.

Pour remaining sauce and cheese over the top.

Bake at 425 for 15 – 20 minutes.
