Quick-Braised Carrots w/Butter

Cook time: 15 minutes
Serves 4 people

Ingredients
- 1 lb carrots, peeled and cut into 1/4" slices
- 2 tbsp butter
- 1/4 c water
- 1 tbsp maple syrup
- salt and pepper to taste
- minced fresh parsley, mint or cilantro for garnish
Directions

Place carrots, butter, water, syrup, salt and pepper in medium saucepan over high heat; bring to a boil and cover.

Turn heat to medium-low and cook for 5 minutes.

Uncover and raise the heat a bit.

Cook, stirring occasionally until the liquid has evaporated and the carrots are cooking in butter.

Lower the heat and continue to cook until tender.

Adjust seasoning if necessary; garnish and serve.
