Chicken and Sweet Potato Stew

Ingredients

  • 4 boneless skinless chicken breasts, cut into bite-sized pieces
  • 2 medium sweet potatoes, peeled and cubed
  • 2 medium yukon gold potatoes, peeled and cubed
  • 2 medium carrots peeled and cut into 1/2-inch slices
  • 1 can (28 oz) whole stewed tomatoes, undrained
  • 1 t salt
  • 1 t paprika
  • 1 t celery seed
  • 1/2 t black pepper
  • 1/8 t ground cinnamon
  • 1/8 t ground nutmeg
  • 1 c chicken broth
  • 1/4 c fresh basil, chopped

Directions

  1. Combine chicken, potatoes, carrots, tomatoes, salt, paprika, celery seeds, pepper, cinnamon, nutmeg, and broth in crock pot. Cover; cook on low 6-8 hours or 3-4 hours. To serve, sprinkle with basil
