Cajun Chicken and Shrimp Creole

Ingredients
- 1 lb skinless chicken thighs
- 1 red bell pepper, chopped
- 1 large onion, chopped
- 1 rib celery, diced
- 1 can (15oz) stewed tomatoes, undrained and chopped
- 1 clove garlic, minced
- 1 T sugar
- 1 t paprika
- 1 t Cajun seasoning
- 1 t salt
- 1 t freshly ground black pepper
- 1 lb shelled, deveined and cleaned
- 1 T fresh lemon juice
- Louisiana-style hot sauce to taste
- 1 c prepared quick-cooking rice
Directions

Place the chicken thighs in the crock pot. Add the bell pepper, onion, celery, tomatoes, garlic, sugar, paprika, Cajun seasoning, salt and pepper.

Cover; cook on low for 8-10 hours or high for 4-5 hours

In the last hour of cooking, add the shrimp, lemon juice and hot sauce. Serve over the hot rice

Tip: For 5,6, or 7 quart crock pot, double all ingredients
