Cajun Chicken and Shrimp Creole

Ingredients

  • 1 lb skinless chicken thighs
  • 1 red bell pepper, chopped
  • 1 large onion, chopped
  • 1 rib celery, diced
  • 1 can (15oz) stewed tomatoes, undrained and chopped
  • 1 clove garlic, minced
  • 1 T sugar
  • 1 t paprika
  • 1 t Cajun seasoning
  • 1 t salt
  • 1 t freshly ground black pepper
  • 1 lb shelled, deveined and cleaned
  • 1 T fresh lemon juice
  • Louisiana-style hot sauce to taste
  • 1 c prepared quick-cooking rice

Directions

  1. Place the chicken thighs in the crock pot. Add the bell pepper, onion, celery, tomatoes, garlic, sugar, paprika, Cajun seasoning, salt and pepper.

  2. Cover; cook on low for 8-10 hours or high for 4-5 hours

  3. In the last hour of cooking, add the shrimp, lemon juice and hot sauce. Serve over the hot rice

  4. Tip: For 5,6, or 7 quart crock pot, double all ingredients
