Cauliflower Delight

This is adapted from my Mom’s recipe in a 1950’s cookbook.

Ingredients

  • 1 cauliflower broken into florets
  • 1/3 C. butter
  • 8 oz. mushrooms, sliced
  • 1/2 red bell pepper, diced
  • 1/4 C. flour
  • 2 C. milk
  • 1 t. salt
  • 1/2 t. pepper
  • 1 sm. jar diced pimentos
  • 1/12 C. sharp cheddar, grated

Directions

  1. Preheat oven to 350°. Spray 2 qt. casserole dish with cooking spray. Cook or steam cauliflower florets until al dente.

  2. Melt butter in sauté pan. Add mushrooms and brown; add red pepper and sauté until soft. Whisk in flour and cook for a minute then slowly whisk in milk and cook until thick. Add pimentos, salt and pepper. Whisk in cheese and blend until smooth.

  3. In prepared casserole, layer half the cauliflower, half the sauce; repeat layers.

  4. Bake for 30 minutes or until heated through.
