Quatro Frijoles Con Pollo Cantero

Ingredients

  • 1 c olives, drained
  • 1 lb chicken breasts, cubed
  • 1 can (16 oz) garbanzo, rinsed and drained
  • 1 can great northern beans, rinsed and drained
  • 1 can kidney beans, rinsed and drained
  • 1 can (6oz) chopped green chilies, drained
  • 2 c chicken stock
  • 2 T oil
  • 2 t garlic, minced
  • 1 c minced onion
  • 1 1/2 t cumin
  • hot sauce, salt, pepper, to taste
  • 2 c crushed corn chips
  • 6 oz grated Monterey jack cheese

Directions

  1. Mix olives, chicken, beans, chilies and chicken broth in crock pot

  2. Saute onion and garlic in oil add to crock pot

  3. Cover and cook on low for 6 hours, add more broth if needed

  4. Add hot sauce, salt, pepper to taste

  5. Serve in warm bowls, garnish with chips and cheese
