Broccoli Cheese Soup

Ingredients

  • 4 c broccoli florets
  • 2 1/2 c vegetable broth
  • 1/4 c milk
  • 1/2 t salt
  • 1/4 t black pepper
  • 1/2 c shredded cheese

Directions

  1. Combine broccoli and broth in large saucepan and bring to boil. Reduce heat and simmer until broccoli is tender. Transfer broccoli and about ½ c broth into blender. Puree until very smooth, scraping sides every 30 sec. while blender is still running, pout in rest of broth. Pour contents of blender through a strainer back into pan. Stir in milk, salt, and pepper. Simmer until heated through. Remove saucepan from heat and add cheese, and stir until melted. Add strained broccoli if desired.
