Ingredients
- 4 c broccoli florets
- 2 1/2 c vegetable broth
- 1/4 c milk
- 1/2 t salt
- 1/4 t black pepper
- 1/2 c shredded cheese

Combine broccoli and broth in large saucepan and bring to boil. Reduce heat and simmer until broccoli is tender. Transfer broccoli and about ½ c broth into blender. Puree until very smooth, scraping sides every 30 sec. while blender is still running, pout in rest of broth. Pour contents of blender through a strainer back into pan. Stir in milk, salt, and pepper. Simmer until heated through. Remove saucepan from heat and add cheese, and stir until melted. Add strained broccoli if desired.
