Big best burgers

Ingredients

  • 1kg extra-lean beef mince
  • 1 onion, finely chopped
  • 1/2 tsp dried chilli flakes
  • 1 egg, beaten
  • 25g fresh white breadcrumbs
  • 1 tsp Dijon mustard
  • 3 tbsp grated Parmesan
  • pinch of grated nutmeg
  • 2 tbsp olive oil
  • 4 ciabatta rolls, toasted
  • 4 tbsp hummus
  • 50g rocket
  • 2 large vine-ripened tomatoes, sliced
  • 1 roasted red pepper from a jar, sliced
  • 4 tbsp mayonnaise

Directions

  1. Put the beef mince, onion, chilli flakes, egg, breadcrumbs, Dijon mustard, Parmesan and nutmeg in a bowl, and season well. Mix thoroughly, then shape into four burgers. Cover and refrigerate for 15 minutes.

  2. Heat the olive oil in a non-stick frying pan over a medium-high heat, then cook the burgers for about 5 minutes on each side, or until cooked to your taste.

  3. Spread the bases of the ciabatta rolls with hummus, then fill the rolls with the rocket, some sliced tomato, a burger, slices of red pepper and a tablespoon of mayonnaise on each. Put the other half of the ciabatta on top and serve.
