Broccoli & Cheese Stuffed Shells

Ingredients

  • 1 15 oz. ricotta cheese
  • 1 12 oz. frozen broccoli florets
  • 1 C. shredded mozzarella cheese
  • 1/3 C. grated Parmesan cheese
  • 1/4 t. black pepper
  • 18 jumbo pasta shells, cooked and drained
  • 1 jar (24 ounces) favorite spaghetti sauce

Directions

  1. Preheat oven to 400°. Spray a 13 × 9” baking dish with cooking spray.

  2. Partially cook the broccoli in the microwave. Let cool.

  3. Stir the ricotta cheese, broccoli, 1/2 cup of the mozzarella cheese, Parmesan cheese and black pepper in a medium bowl. Spoon about 2 tablespoons of the cheese mixture into each shell.

  4. Spread 1 cup of the sauce in prepared baking dish. Place the filled shells on the sauce. Pour the remaining sauce over the shells. Sprinkle with the remaining mozzarella cheese.

  5. Bake for 25 minutes or until it’s hot and bubbling.
