Black Bean Rice

Ingredients

  • 1 14 ounce can coconut milk
  • 1 tsp salt
  • 1 cup uncooked basmati rice
  • 1 15 ounce can black beans, drained and rinsed
  • 1/2 cup chopped red bell pepper
  • 1/3 cup sliced green onions

Directions

  1. Cook rice in coconut milk and salt.

  2. Stir in black beans, red pepper, and green onions.

  3. Serve.
