Red Potato Salad

Ingredients

  • 6 large red potatoes
  • 1/2 cup sour cream
  • 1/2 cup plain greek yogurt
  • 1/4 cup fresh chives, finely chopped
  • Salt and pepper to taste

Directions

  1. Scrub potatoes. Don’t peel. If large, cut in half or in quarters.

  2. Boil potatoes in salt water until fork-tender.

  3. Drain, dry, and cut into 1/2 inch cubes.

  4. In salad bowl, combine potatoes with other ingredients.

  5. Refrigerate until chilled.
