Fiesta Chicken Rolls

Ingredients
- 8 chicken breast halves, skinned and boned
- 1/4 cup shredded Cheddar cheese
- 1 (3 oz.) pkg of Cream cheese, softened
- 2 Tbsp. butter, softened
- 2 Tbsp. chopped green chiles
- 2 Tbsp grated onion
- 1/4 tsp salt
- 1/8 tsp black pepper
- 1 3/4 Cups bit sized Cheddar cheese crackers, crushed
- 1 tsp. chili powder
- 1/4 tsp ground cumin
- 1/4 tsp ground red pepper
- 1/8 tsp garlic powder
- 1/4 cup butter, melted
Directions

Place chicken between 2 sheets of heavy-duty plastic wrap; flatten to 1/4 inchy thickness, using a meat mallet or rolling pin. Set aside.

Combine Cheddar cheese and next 6 ingredients in a small bowl; stir well.

Spoon cheese mixture evenly over center of each chicken breast half. Roll up jellyroll fashion, starting with short end; secure with wooden picks.

Combine cracker crumbs, chili powder, cumin, red pepper and garlic powder in small bowl; stir well.

Dip chicken in melted butter; dredge in crumb mixture. Place seam side down in 13 × 9 inch baking dish.

Bake uncovered at 400 degrees for 20 to 25 minutes or until done. Remove wooden picks before serving.
