Creamy Lemon Freeze in Lemon Shells

Ingredients
- 1 cup milk
- 1 cup whipping cream
- 1 cup sugar
- 3 Tbsp. grated lemon rind
- 1/3 cup fresh lemon juice
- Scalloped lemon shells (optional)
- Garnish: fresh mint sprigs.
Directions

Combine milk, whipping cream, and sugar in a medium bowl; stir until sugar dissolves.

Cover and freeze 2 hours.

Add rind and juice;beat at medium speed of an electric mixer 3 to 5 minutes or until thickened.

TO STORE: Cover tightly, and freeze at least 24 hours and up to 2 weeks.

TO SERVE: Scoop Creamy Lemon Freeze into scalloped lemon shells, if desired, or dessert dishes. Garnish if desired. Serve immediately
