Creamy Lemon Freeze in Lemon Shells

Ingredients

  • 1 cup milk
  • 1 cup whipping cream
  • 1 cup sugar
  • 3 Tbsp. grated lemon rind
  • 1/3 cup fresh lemon juice
  • Scalloped lemon shells (optional)
  • Garnish: fresh mint sprigs.

Directions

  1. Combine milk, whipping cream, and sugar in a medium bowl; stir until sugar dissolves.

  2. Cover and freeze 2 hours.

  3. Add rind and juice;beat at medium speed of an electric mixer 3 to 5 minutes or until thickened.

  4. TO STORE: Cover tightly, and freeze at least 24 hours and up to 2 weeks.

  5. TO SERVE: Scoop Creamy Lemon Freeze into scalloped lemon shells, if desired, or dessert dishes. Garnish if desired. Serve immediately
