New Potato Casserole

Ingredients

  • 1 1/2 pounds new potatoes
  • 2-4 Tbsp. milk
  • 1 (8 oz.) package cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup chopped fresh chives
  • 1/4 cup grated Romano cheese
  • 1/2 tsp salt
  • 1/4 tsp ground white pepper
  • Paprika

Directions

  1. Cook potatoes in boiling water to cover 20 minutes or until tender; drain.

  2. Combine potatoes and milk; mash potatoes

  3. Combine cream cheese and next 5 ingredients in separate bowl, stirring well. Fold into potato mixture. Spoon mixture into a lightly greased 1 1/2 quart casserole. Sprinkle with paprika.

  4. Bake uncovered at 350 degrees for 30 minutes or until thoroughly heated.

  5. NOTE: Mixture can be made ahead and stored in refrigerator up to 2 days.
