Skillet Tortellini Alfredo Pomodoro

Ingredients
- 1 package (15-19 oz.) frozen cheese tortellini
- 1 T. olive oil
- 6 oz. mushrooms, sliced
- 2 small shallots or onions, chopped
- 1 clove garlic, minced
- Salt and pepper
- 1 jar Alfredo Sauce
- 1 large tomato, seeded and chopped
- 1/4 C. loosely packed fresh basil leaves, finely chopped
- Milk
- Grated Parmesan cheese

In a large pan filled with salted water, boil tortellini until it just floats to the top. Drain and set aside.

Heat oil in 12-inch nonstick skillet over medium-high heat and cook mushrooms, shallots and garlic, stirring occasionally until tender.

Stir in Alfredo sauce and tomato. Simmer for a few minutes, stirring occasionally. Stir in tortellini and basil and simmer for 8 minutes until tortellini is tender. Add a little milk if the sauce is too thick.

Serve with Parmesan cheese.
