Skillet Tortellini Alfredo Pomodoro

Ingredients

  • 1 package (15-19 oz.) frozen cheese tortellini
  • 1 T. olive oil
  • 6 oz. mushrooms, sliced
  • 2 small shallots or onions, chopped
  • 1 clove garlic, minced
  • Salt and pepper
  • 1 jar Alfredo Sauce
  • 1 large tomato, seeded and chopped
  • 1/4 C. loosely packed fresh basil leaves, finely chopped
  • Milk
  • Grated Parmesan cheese

Directions

  1. In a large pan filled with salted water, boil tortellini until it just floats to the top. Drain and set aside.

  2. Heat oil in 12-inch nonstick skillet over medium-high heat and cook mushrooms, shallots and garlic, stirring occasionally until tender.

  3. Stir in Alfredo sauce and tomato. Simmer for a few minutes, stirring occasionally. Stir in tortellini and basil and simmer for 8 minutes until tortellini is tender. Add a little milk if the sauce is too thick.

  4. Serve with Parmesan cheese.
