Chicken with Herb Mushroom Sauce

Ingredients

  • 4 Unbreaded Chicken Breasts
  • 2 teaspoons dried herb mixture (thyme, marjoram, rosemary, and sage)
  • 1/4 teaspoon pepper
  • 1 tablespoon unsalted butter
  • 1 cup sliced mushrooms
  • 1/4 cup diced onion
  • 1 cup cherry tomatos, quartered
  • 1 1/2 cup chicken broth
  • 1 teaspoon lemon juice

Directions

  1. Season chicken with herb mixture and pepper.

  2. Saute seasoned chicken in unsalted butter, over medium-high heat until lightly browned.

  3. Move chicken breats to one side of pan.

  4. Add mushrooms, onions, and tomatos.

  5. Saute for 4-6 minutes.

  6. Stir in chicken broth and lemon juice.

  7. Simmer until liquid is reduced.

  8. Serve.
