Cornflake Cookies

A family favorite that was passed down from our grandmother Roberta. Really good and addicting!

Ingredients
- 1 1/2 cup flour
- 1 1/2 tsp. baking powder
- 1 tsp. baking soda
- 1 cup brown sugar packed
- 1 cup butter
- 1 egg
- 1 cup oatmeal
- 1 cup coconut
- 1 cup salted Spanish peanuts
- 1/2 cup crushed corn flakes
- Icing
- 3 tablespoons of butter
- 1 1/ cups confectioners sugar
- 1 1/2 tablespoons hot water
- 2 tsp. vanilla

Directions

Heat oven 350F.

In bowl, combine flour, baking soda and powder.

In a larger mixer bowl, combine butter and sugar a little at a time until light and fluffy.

Add egg and beat well.

Gradually add dry ingredients blending well after each addition.

Stir in oatmeal, coconut, peanuts and cornflakes

Drop by rounded teaspoons onto cookie sheet.

Flatten slightly with glass bottom dipped in additional crushed corn flakes.

Bake 10 minutes but watch so they don’t burn. 9 1/2 minutes seems to be better.

Let sit on pan for 2 minutes and remove.

Put on wax paper and frost with icing.

Icing:

Melt butter in 2 cup measuring glass cup in the microwave.

Add confectioners sugar, water, and vanilla.

Beat until smooth. We always make more and eyeball the ingredients.
