Oprah’s Classic Potatoes

Cook time: 30 minutes
Serves 8 people

Ingredients

  • 2 1/2 lbs red potatoes
  • 2 1/2 lbs Idaho potatoes
  • 1 1/4 c butter
  • 1 1/2 c creamy horseradish
  • 1 1/2 c heavy cream
  • 2 1/2 tsp Kosher salt
  • 1 1/2 tsp ground black pepper

Directions

  1. Wash potatoes, leave skin on. Cut in half lengthwise.

  2. Place in kettle, fill water to cover.

  3. Bring to boil. Reduce heat and simmer until very tender.

  4. Drain water, add butter while hot.

  5. Hand mash and add other ingredients.

  6. Best if slightly lumpy.
