Lemon Rice

This is a good side dish for any “lemony” entree.

Prep time: 5 minutes
Cook time: 20 minutes
Serves 4 people

Ingredients

  • 2 C. water
  • 2 T. lemon juice, freshly squeezed
  • 1 T. butter
  • 1 cup uncooked rice
  • 1/4 t. dried basil
  • 1/4 t. lemon zest
  • 1 t. lemon pepper seasoning

Directions

  1. Combine all ingredients except lemon pepper in saucepan. Bring to a boil; reduce heat. Cover pot and allow to simmer slowly for 20 minutes, or until liquid is absorbed.

  2. Stir in lemon pepper before serving.
