Broccoli Potato Soup

Ingredients

  • 1 pd small red potatoes, cubed
  • Large onion chopped
  • Large carrot chopped
  • 3 c water
  • 1 can cream of broccoli soup
  • 1 t each minced fresh thyme, basil and parsley
  • 1 t garlic powder
  • 1/2 t salt
  • 1/2 t crushed red peppers
  • 1/4 t pepper
  • 2 c frozen chopped broccoli, thawed and drained
  • 1 c (4 oz) shredded Havarti cheese

Directions

  1. Place potatoes, onion carrot and garlic in crock pot. Add water soup and seasonings. Cover and cook on low for 4-5 hours. Stir in broccoli and cheese. Cover and cook for 30 minutes more or until the broccoli is tender.
