Parmesan Pasta

This is a simple quick supper. Serve with a salad and garlic bread and you’re ready to go in just a few minutes.

Prep time: 5 minutes
Cook time: 15 minutes
Serves 4 people

Ingredients

  • 16 oz. dry spaghetti
  • 1-1/4 C. half and half
  • 1 C. freshly grated parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley

Directions

  1. Bring a large pot of salted water to a boil. Add the pasta and cook until just short of al dente. Reserve a cup of the pasta water, and drain.

  2. Return the pasta to the pot. Add the half and half and the cheese. Toss with a pair of tongs for several minutes, until the liquid is absorbed and a silky sauce has formed. If it seems too dry, add some of the reserved pasta water. Season to taste with salt and pepper.

  3. Serve topped with chopped fresh parsley and additional parmesan, if desired
