Manicotti

Ingredients

  • 225 g/1 pkg Manicotti shells
  • 375 g fresh spinach, boiled and finely chopped
  • 1 egg, beaten
  • 500 g Ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded Mozzarella cheese
  • meat from 3 sausages/mild turkey italian
  • 2 cloves garlic, chopped
  • 1/4 cup fresh parsley
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp nutmeg
  • 2 Tbsp breadcrumbs
  • 24 oz can Tomato Sauce/tomato pesto

Directions

  1. Boil shells per directions, drain, set aside

  2. In large mixing bowl combine Ricotta, spinach and egg; stir

  3. Continue stirring and add 1/4 cup of the Parmesan (half) and the rest of ingredients except for tomato sauce

  4. Spread 1/2 cup of sauce over bottom of dish(es)

  5. Fill shells with mixture and place in a single layer on sauce in dish

  6. Cover with remaining sauce and sprinkle with remaining Parmesan (1/4 cup)

  7. Cover and bake at 350 F for 30-45 minutes
