Hulk SMASH Super Green Soup

Ingredients
- 1 tbsp avocado oil
- 1 leek thinly sliced
- 4 cups chicken stock
- 6 cups broccoli chopped
- 6 cups baby spinach
- 1-2 tbsp tahini
- sea salt to taste
- cracked pepper to taste
- parmesan cheease grated, to taste (optional)
- Sriracha to taste (optional)
Directions

Grab a pot, pour in the oil, and crank the stove up to medium-high heat. Add in sliced leeks and cook until tender.

Add chicken stock and bring to a boil. Once bubbling with the intensity of Hulk’s rage, add broccoli and cook uncovered until the broccoli turns bright green and tender.

Turn the stove off and remove the pot from heat. Stir in the spinach, working in batches. The spinach will shrink considerably, allowing you to add more without having an unruly bunch of spinach overtaking the pot. Once incorporated, add the tahini, salt, papper and, if you eat dairy, throw in some grated parmesan.

Let the soup cool before attempting to puree in a blender. If you don’t wait and if you don’t secure the top to the blender properly, you may end up with burns all over your arms and enough soup on you to make you look like the Hulk yourself (not that this has ever happened to me or anything like that…). Add soup to the blender (I don’t recommend filling it all the way to the top) and puree, working in batches.

Taste the pureed goodness and add salt and/or pepper until it tastes fantastic. I am addicted to spicy foods, so I add Sriracha . Enjoy!
