Roasted Asparagus & Mushrooms

Ingredients

  • 1 pound asparagus spears
  • 8 ounces mushrooms
  • 3 large cloves garlic
  • 1/2 t. salt
  • 1/4 t. black pepper
  • 2 T. butter, melted

Directions

  1. Heat oven to 425 degrees. Arrange asparagus and mushrooms on aluminum foil-lined jelly roll pan. Sprinkle garlic, salt and pepper on top. Drizzle melted butter over vegetables.

  2. Bake, stirring occasionally, for 15 to 20 minutes, or until vegetables are tender and lightly browned. Serve immediately.
