Twice Baked Potatoes

Serves 6 people

Ingredients

  • 6 large potatoes
  • 1/3 cup low fat sour cream
  • 2/3 cup skimmed milk
  • 1 T. seasoned salt
  • 1 egg
  • 1/2 cup shredded cheese

Directions

  1. Scrub and bake potatoes one hour at 350 degrees. Cut slice off top of potato and scoop out insides. Mash potatoes with remaining ingredients.

  2. Still skins to overflowing (mixture will be stiff). Quick freeze potatoes on a cookie sheet. Place in plastic bag and store in freezer. Cook in oven at 400 degrees for 10 minutes if thawed, 30 minutes at 400 degrees if frozen.
