Jalapeno Cream Cheese Chicken Enchiladas

Ingredients
- 3 skinless, boneless chicken breast halves
- 1 tsp cayenne powder
- 1/2 tsp garlic powder
- salt and pepper to taste
- 2 TBSP butter
- 1 large onion - minced
- 2 jalapeno peppers - seeded/minced
- 1 (8oz) cream cheese
- 1/2 tsp cayenne powder
- 1 TBSP garlic powder
- 1/2 tsp paprika
- 1/2 tsp chili powder
- 1/2 tsp ground cumin
- 1 (28oz) can green enchilada sauce
- 7 flour tortillas
- 8 oz montery jack cheese
Directions

350 deg. oven

Season check with 1 tsp cayenne pepper, 1/2 tsp garlic powder, salt and pepper.

Place in baking dish – bake til no longer pink – 45 min. (cool and shred)

Heat butter in large skillet on medium heat an cook onion and jalapenos – 5 min.

Stir in cream cheese in chunks – allow to melt and soften

Mix 1/2 tsp cayenne pepper, 1 TBSP garlic powder, paprika, chili powder and cumin

Mix some in with cooked chicken

Pour 1/2 sauce in bottom of pan

Make enchiladas with cheese and chicken

Pour sauce over and sprinkle with cheese

Cook 30-35 min.
